The ingredient of Fodmap Friendly Banana Bread
- 2 cups gluten free flour
- 2 tablespoons chia seeds or lsa mix
- 1 teaspoon baking powder
- 1 2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 cup shredded coconut
- 1 2 cup mixed berries fresh or frozen
- 2 cups bananas mashed
- 2 eggs
- 2 tablespoons sesame or sunflower seeds
The Instruction of fodmap friendly banana bread
- pre heat oven to 150c fan forced grease a loaf pan
- in a large bowl mix dry ingredients except for sesame or sunflower seeds together
- make a well in the centre of the dry mixture and add bananas along with lightly beaten eggs stir together until combined it will be stiff do not over stir
- turn into prepared pan sprinkle sesame or sunflower seeds on top and lightly press into loaf bake for 50 60 minutes until well risen and crusty and golden on top turn loaf out onto cooling rack
- serve with butter or alternative and nut butter
